I was too hungry to take a photo!

I’m sorry.

You’ll have to trust me on this quick salad. It’s one of my favourite five-minute throw-togethers.

The trick is to stuff your face with huge mouthfuls of salad, covered in balsamic with refried beans. For a raw version substitute refried beans with raw hummus.

It’s swoony and I always whip this out to impress people.

INGREDIENTS

Lettuce
Carrot
Avocado
Cucumber
Refried beans
Balsamic vinegar
Oil
Pepper

INSTRUCTIONS

Chop lettuce, arrange chopped carrots, avocado and cucumber on top. Put two generous spoonfuls of refried beans on the side. Drizzle balsamic and a little oil over the lot and garnish with pepper. Enjoy!
