This is a really yummy lunch or dinner for paupers, such as us.

You know what they say, “Breakfast like a king, lunch like a prince, and dinner like a pauper.”


Roast potatoes
Spinach, chopped
1 tin four-bean mix, drained
3 handfuls mung bean sprouts
A few mushrooms, sliced
1/3 capsicum, sliced
Mixed herbs
Dash of oil

Dressing Options
Sweet chili sauce
Balsamic dressing
Tahini Sauce
Sunflower Seed Cream Cheese


Roast potatoes. In a deep frying pan, add roast potatoes, vegetables, beans, a good sprinkling of mixed herbs, salt and oil. Cook through. Serve with dressing of your choice; I prefer Sunflower Seed Cream Cheese or Tahini Sauce.
