Almond Pancakes

These aren’t like regular pancakes, OK? They’re nutty.

We enjoyed them with steamed pear, but what they really need is a tart raspberry sauce and warm bananas.

I was so sad I didn’t have a tart raspberry sauce and warm bananas with this.

I was close to not sharing this recipe, but I have. I hope you like it!

INGREDIENTS

1/2 cup almond meal (after making almond milk or almond flour)
1 banana
Handful of crushed walnuts
1 tablespoon maple syrup
2 pinches cinnamon
1 pinch salt
1 teaspoon gluten flour (I am not sure this is necessary but opted for it to bind it)
Steamed pears or tart raspberry sauce and warm bananas

INSTRUCTIONS

Mix all ingredients. Bake until golden on one side. Flip. Be careful flipping them, they are crumbly but will stay together with a careful hand. Bake until golden on the other side. Serve with fruit and sweet syrup.
