Quinoa Madness – Quinoa Porridge

It’s your friend quinoa again!

I think it’s best to whip up a bunch of this stuff at once and use it in various yummies.

To take this to the next level, mix in some peanut butter.

INGREDIENTS

1/2 cup cooked quinoa
1/4 cup dessicated coconut
Handful of sultanas
Handful of crushed walnuts
Handful pumpkin seeds
2 pinches of cinnamon
1 pinch of salt
Maple syrup or other sweet syrup (agave, yacon) to taste – I used 2 teaspoons
1/2 cup almond milk (you could use soy)

INSTRUCTIONS

Drop everything into a pot, stir and warm until the liquid has somewhat evaporated. Serve drizzled with sweet sauce (if you like), cool almond milk and slice a banana atop for good measure. Yum.
