Raw Tacos

These are lovely. They’re easy to make and very filling.

You’ll find here raw taco shells, taco nut meat and I serve these with raw cashew cheese.

The taco shells were taken from Raw Food Real World and the nut meat from Ani’s Raw Food Essentials.

Their recipes called for home-made guacamole and salsa, but I kept mine simple. You might like to make yours a little more elaborate.

If you like chili, add some!

1 cup walnuts
1 tablespoon oil
1 tablespoon ground cumin
1 teaspoon ground coriander
1 teaspoon soy sauce
1/4 teaspoon salt

Blend in a food processor until the mixture takes on a crumbly appearance.

1 large corn cob
1/2 large capsicum (red bell pepper)
1 cup ground flaxseed
1 tablespoon lemon
1 teaspoon sea salt
2 teaspoons ground cumin

Slice the corn off the cob. Blend in a food processor with capsicum. Add all other ingredients, blend into batter (add a little water to moisten, if necessary). Spread into ovals on silicone or teflon for the dehydrator. Dehydrate for approximately 3 hours, flip gently, then dehydrate the other side for an additional 2 hours. Check occasionally to be sure they are not crispy and can still be folded.

Serve tacos filled with nut meat, nut cheese and salad (lettuce, cucumber, carrot, tomato and avocado). Drizzle with oil and include any salsa or sauce you like.
