Raw Spring Rolls with Almond Satay Sauce

Good for the lunchbox.

You may wish to add ginger, garlic or chili to the sauce if you like it spicy!

INGREDIENTS & INSTRUCTIONS –  Spring Rolls

Large silverbeet leaves
Mung bean sprouts
Carrot
Beetroot
Capsicum

Finely slice vegetables and roll in large silverbeet leaves. I cut the stem out and cross over the “gap” before rolling. You can use any large green leafy vegetable and include any vegetables you prefer, inside.

 

INGREDIENTS & INSTRUCTIONS – Satay Sauce

2 heaped tablespoons almond butter
1 tablespoon lemon
1 & 1/2 tablespoons agave or sweet syrup
1 teaspoon soy sauce
2 pinches salt
two tablespoons water

Blend all ingredients. Add more water if desired to achieve the preferred consistency. You may like to also add garlic, ginger, chili or coconut cream.
