Baking for Baby – Spiced, Moist Fruit Muffins

Upon the advice of all women everywhere I’m baking and freezing food in preparation for the new arrival; apparently this is prudent behaviour.

I modified this delicious little recipe, which yielded 20 mid-sized, moist, fluffy muffins.

I found it really hard to freeze them because, well, frankly, I wanted to gobble them all up immediately!

I hope you enjoy this recipe. I’m sorry you’ve not heard from me in a while – I’ve been too occupied to post. At 38 weeks pregnant, I’m hurrying about trying to get things organised and finish University assignments ahead of time.

 

INGREDIENTS

1.5 pears
1 apple
1 banana
2 tablespoons golden syrup, treacle or molasses
1/2 cup oil
2 teaspoons baking powder
2 teaspoons baking soda
2 cups flour
1 cup sugar
1.5 teaspoons cinnamon
1 teaspoon mixed spice
1 teaspoon apple-cider vinegar
1/2 teaspoon salt
1/2 cup raisins
1/4 to 1/2 cup water

INSTRUCTIONS

Chop and core apple and pears, drop into food processor and blend until chunky. Add in banana, and blend. Add all other ingredients except water and blend. Add water. Drop into greased, stick-less muffin tins, bake until springy to touch. Serve warm with melty margarine.
