Kat’s Hippie Nosh

So this is the kind of hippy shit people think vegans eat.

And they’d be right. This is exactly the kind of hippy shit vegans eat.

Like all hippy shit, this recipe is kind of loose when it comes to quantities; I encourage you to feel your way through. The fennel is not overpowering in this amount so don’t be shy. The rosemary offsets the intensity of the fennel.

Without further ado; Kat’s Hippy Nosh.


1/2 an onion, chopped
2 cloves of garlic
dash of oil
1 tin brown lentils, drained
1 cup rice
2-3 tablespoons soy sauce
2 large handfuls fresh fennel, chopped
2 large sprigs of rosemary
2-3 cups of water
2 teaspoons cornflour or tapioca starch


Sauté garlic and onion until soft. Add in drained lentils, 1 cup rice, 1 cup water and 2 tablespoons of soy sauce. Throw in the chopped fennel and then run your fingers along the stalks of rosemary so all the little leafy bits go into the pan and the woody bits don’t. Boil, then simmer until rice is cooked and water has reduced. If water reduces before rice is completely cooked, add another cup and simmer until that has reduced. Keep adding water and reducing until all ingredients are cooked. Add cornflour or tapioca starch mixed with a little bit of water to thicken. Salt generously to taste and add more soy sauce if required (I like it punchy so I’m quite generous). Serve with pepper.
