Delicious Mango Curry

This was so creamy and delicious. The sauce has the same addictive quality that raw mangoes do.



1 teaspoon turmeric
1 teaspoon cumin
2 teaspoons curry powder
2 cloves garlic
1/2 an onion
1/2 a capsicum
1 tin coconut cream
2 mangoes
1 block firm tofu
Bok choy
Chilli (optional)


Chop onions, capsicum and garlic and cook until soft in a generous amount of oil. Add in turmeric, curry powder and cumin. Fry a little longer, bang in the tin of coconut cream, and one whole chopped mango. Once cooked through, pop in the lot into a food processor and whizz into a sauce. Chop tofu, bok choy and remaining mango. Return to the pan and fry a little. Return mango sauce to the pan, salt to taste, add chilli if desired and cook through. Serve hot, over rice.
