INGREDIENTS
250g penne pasta (gluten-free if desired)
Baby tomatoes
200g extra-firm tofu
Spring onions
Sunflower Seeds
2 heaped tablespoons Masterfoods Tartare Sauce (or other vegan mayo)
Salt
Pepper
Oil
INSTRUCTIONS
While pasta is cooking, fry thin strips of tofu in oil, slice spring onions, and cut baby tomatoes in half. Once cooked, drain pasta and stir through: tofu, spring onions, tomatoes, two handfuls of sunflower seeds, tartare sauce, and season with salt and pepper. Serve cool or warm.
