Blissful Margherita Pizza

INGREDIENTS

BASE
1 & a 1/2 cups water
2 tablespoons olive oil
2 teaspoons salt
2 teaspoons sugar
4 cups wholemeal flour
1 tablespoon of mixed herbs
4 teaspoons fast rise yeast
Extra flour for rolling

TOPPING
Oil
Garlic
Thinly sliced tomatoes
Fresh basil
Salt
Pepper
Mixed herbs
Vegan cheese (Cheezly) or cashew cheese
Oil

DIRECTIONS

Add all base ingredients (except for extra flour for rolling) to a breadmaker in the order listed. Set to “dough” setting (approx 2.5 hours to rise). Roll out dough, using extra flour, and shape into pizza bases. Mix 2 teaspoons of garlic with oil, and brush on bases. Blind bake. When cooked but not crispy, remove bases from oven and top with thin slices of tomato, fresh basil, salt, pepper, mixed herbs and a good helping of vegan cheese (or cashew cheese) and drizzle with oil. Bake until cheese has melted or top is crispy.
